- Autumnal Pasta with Cabernet and Cherry Tomatoes
- You will need…
- 3 cups of your favorite pasta
- 1/4 tbsp butter
- 1 bulb garlic
- 1 large bunch or package of basil
- 6-8oz cherry tomatoes
- 1-2 cups cabernet sauvignon wine
- Cook 3 cups of your favorite pasta, rinse, drain, and add 1/4 tbsp butter to flavor and prevent sticking. While pasta is cooking, Press 1 bulb of garlic and set aside. Chop one package or large bunch of basil and set aside. Slice 6-8oz of cherry tomatoes in half and cook over low-med heat with at least 1 cup of cabernet sauvignon wine, or to taste, and simmer for about 20 minutes. Pour cabernet tomaotoes into buttered pasta, and add garlic and basil. Stir, mix, and enjoy!

- Hummus Garlic Toast

- 1/4 cup pre-made or store-bought hummus
- 4-6 cloves of garlic depending on the size
- 1 large tomatoe
- 1-2 slices of toasted sourdough bread
- or
- pita chips
- Take ¼ cup of store-bought or homemade plain hummus and press about 4-6 cloves of garlic and mix. Spread over toasted sourdough with a thinly sliced large tomato or use as a dip with pita chips.

- Black Bean Medley
- You Will Need…
- 1/4 Onion
- 6-8oz diced cherry tomatoes
- 15oz black beans, (rinsed and precooked)
- 1 bunch cilantro, chopped
- 1 bulb garlic pressed
- 1 ripe lime, squeezed, pressed, or juiced
- Dice ¼ of an onion and simmer on low heat. Add 6-8oz of diced cherry tomatoes to the simmer. Add 15oz of rinsed precooked black beans to the mix and simmer together for about 15 minutes. Raise the temperature to medium heat and allow to boil mildly for about 10 minutes. Chop a bunch of cilantro and press one bulb of garlic, stir into the black bean mix after removing from heat. Juice one lime into the black bean medley and stir.
- This is irresistible and must be eaten immediately. It’s even more savory when you dice an avocado over the top and or add tortilla chips. Season to taste!
- Dice ¼ of an onion and simmer on low heat. Add 6-8oz of diced cherry tomatoes to the simmer. Add 15oz of rinsed precooked black beans to the mix and simmer together for about 15 minutes. - 1/4 tbsp butter
- 1-2 bunches or packages of fresh basil chopped
- 6-8oz of cherry tomatoes diced
- 1 bulb garlic minced
- 1 ripe lemon, squeezed, pressed, or juiced
- 1 open container of grated, shredded or your favorite fresh parmesan cheese
- Prepare 3 cups of your favorite pasta and add 1/4 tbsp of butter to flavor and prevent sticking. Chop 2 packages or bunches, (a large amount) of fresh basil. Dice into small sections 6-8oz of cherry tomatoes and mix with basil. Mince one bulb of garlic and stir into tomato and basil mix. Squeeze one lemon into the mix and stir well. Serve with a spoon over pasta with parmesan and enjoy.
- Can serve 3-4 people, depending on how hungry you are.

- 1/2 cup cottage cheese
- 4-6 cloves of garlic pressed depending on size
- 1-2 slices of toasted sourdough bread
- Spoon out ½ cup of cottage cheese and press about 4 cloves of garlic. Mix together and serve over toasted sourdough.
- This is a great satiating afternoon snack that’s full of protein.

- You Will Need…
- Tofu and Brown Rice with Basil, Tomatoes and Garlic
- You Will Need…
- 1/2 onion diced
- olive oil
- 1 package extra extra firm tofu
- soy sauce
- 1-2 bunches of fresh basil leaves
- 1-3 medium to large tomatoes diced
- 1 bulb garlic
- some salt, cumin, and/or pepper to taste
- Dice ½ of a white or yellow onion and simmer over low to medium heat with a small amount of olive oil. Throw in one package of diced extra extra firm tofu and let brown. Cover tofu with soy sauce and cook over low to medium heat until no longer wet. Tofu will be golden, and onions clear.
- Chop a couple of bunches of fresh basil leaves and set aside. Dice a couple of medium to large tomatoes and throw over simmering tofu and onion mix. Let sit over low heat for about 10-15 minutes. Press one bulb of garlic and set aside.
- Remove the tomato tofu mix from the heat, and stir in the basil, and garlic.
- Salt to taste and serve over wild brown rice! Yum.
