Minerals found in a bulb of garlic include Manganese, Selenium, Copper, Iron, Phosphorous, Potassium, and Zinc.

The most famous compound in a garlic bulb is the sulfur compound Allicin.  Allicin is responsible for garlics antiviral, antimicrobial, and antifungal components.   Other organosulfur compounds beyond Allicin include Diallyl Disulfide and Diallyl Trisulfide.
